Strawberry Jello Fluff Dessert

Strawberry Fluff Dessert Ingredients:
  • 1 pint strawberry, hulled, washed, thoroughly dried, then sliced
  • 1 (16 ounce) container small curd cottage cheese
  • 1 (3 ounce) package strawberry Jell-O gelatin dessert (unprepared, use powder only)
  • 1 (8 ounce) container Cool Whip, thawed
  • 1/3 cup chopped pecans
Strawberry Fluff Dessert Instructions:
1.In large mixing bowl, add jello powder to cottage cheese and mix well,scraping bottom and sides of bowl, until THOROUGHLY blended.
2. Gently stir in sliced strawberries.
3.Fold in thawed Cool Whip to blend, and transfer to serving dish.
4 Top with chopped pecans, cover, and refrigerate at least 3 hours (preferably overnight).

Strawberry Fluff Dessert Ingredients:
  • 1 c flour
  • 1/4 c brown sugar
  • 1 stick (1/2 c) butter, softened
  • 1/2 c finely chopped nuts (optional if you are allergic to nuts)
  • 2 egg whites
  • 1 c sugar
  • 2 c strawberries, hulled and cut in quarters
  • 1 c whipped cream
  • sliced strawberries, for garnish (optional)
Strawberry Fluff Dessert Instructions:
1. In mixing bowl, combine flour, brown sugar, butter, and nuts until crumbly. Spread loosely on a cookie sheet/jelly roll pan and bake at 350 degrees for 10 minutes. Cool.
2. Beat egg whites until frothy. Add sugar and beat for about 5 minutes. Add strawberries and beat on HI for 10-12 minutes. Fold in whipped cream.
3. Spread 1/2 of crumb mixture on the bottom of a 9 x 13 pan. Pour strawberry mixture over crumbs, and top with the rest of the crumbs. Garnish with sliced strawberries if desired. Freeze.
4. Remove from freezer shortly before serving.

Strawberry Fluff Dessert Ingredients
  • 2/3 cup (160 ml) full-fat coconut milk (the kind in the can)
  • 2 cups (480 ml) sliced fresh or frozen strawberries
  • 2 Tbsp (30 ml) whole chia seeds*
  • 1/2 tsp (2.5 ml) pure almond extract (omit if sensitive)
  • 1 tsp (5 ml) pure vanilla extract
  • 1 Tbsp (15 ml) freshly squeezed lemon juice
  • 15-25 drops plain or vanilla stevia, to taste

Strawberry Fluff Dessert Instructions
Place all ingredients in a high-powered blender* (such as a VitaMix) and blend until perfectly smooth. Pour into glasses and refrigerate until cold, 1-2 hours (or just eat it right away if you can’t wait–thinner, but still good)...enjoy the strawberry fluff !
